Guatita Ecuatoriana (Ecuadorian-style Tripe Stew)

The secret to this recipe is to use enough peanut butter. The amount of ingredients I used for this recipe could feed 8-10 people. You can use less tripe and less ingredients to make enough just for one or two people. I usually cook family style meals, also you can also add different vegetables in the end. Some people use peas and carrots and add a boiled egg on top.

I am from Guayaquil, and this is how my mom and grandmother used to make it. Everyone that has tried my tripe has become a fan.
