Johnnycakes (jon-ee-keks) are English muffin sized biscuits that are made all throughout the Caribbean and in Belize. This recipe can be made with Vitamin D Milk or evaporated milk, but it is best when made with coconut milk. These cakes can be a quick meal for breakfast, lunch or dinner.
