Ramona Singer may be a "Real Housewife" by day, but by night she's an avid home cook. Today, she's showing us how to make an easy entrée that gets a special kick from one of our favorite summertime ingredients: BACARDI® rum.

Mojito Chicken Skewers by BACARDI®

Makes 16 servings

INGREDIENTS:

1/2 cup plus 1 tbsp. BACARDI® Superior Rum
1/2 cup vegetable or olive oil
1/4 cup fresh lime juice
1/4 cup mint leaves
2 tbsp. plus 1 tsp. sugar
1/4 tsp. salt
PREPARATION:

1. Combine BACARDI® Superior Rum, vegetable oil, lime juice, mint leaves, sugar and salt in food processor or blender; process until mint is pureed.

2. Cut each chicken breast lengthwise into 4 strips. Combine chicken with mint marinade and refrigerate 1 to 4 hours. Place lime quarters in shallow bowl.

3. Add remaining BACARDI® Rum and sugar; toss to coat and refrigerate. Thread one strip of chicken onto each skewer. Place on rack of shallow roasting pan. Broil chicken about 3 inches from heat for 3 to 4 minutes per side, or bake at 425 degrees F for about 12 minutes until no longer pink.

4. Cook limes with chicken just until warmed. Squeeze limes over chicken and garnish platter with fresh mint.
