Whole Wheat Flat Bread
2 cups whole wheat flour
3 tablespoons shortening
2½ teaspoons baking powder
1 teaspoon salt
1 teaspoon granulated garlic, optional
1 teaspoon crushed red pepper, optional
¾ cup warm water
1. Combine the dry ingredients in a bowl, add the shortening and work in with your fingers. Add the warm water and use a fork to mix it in. Form dough, adding a touch more flour if it feels too sticky. Cover and set aside for 1 hour.
2. After an hour, heat and indoor grill pan to medium heat. I like to line mine with easy release foil for easy clean up. Divide dough into 4 equal portions and on a flat, lightly flour surface, roll each dough ball out into a round 10-inch size flat bread. Brush the grill with plenty of olive oil and cook 1 flat bread at a time for about 4 to 5 minutes per side, brushing with olive oil every time you turn. You are looking for some nice grill marks.
3. To make pizza out of the flat bread, preheat oven to 475ºF, top with your favorite toppings and bake for about 9 to 10 minutes or until cheese starts to brown a little.
Note: This was originally my recipe for Navajo bread, but made with all-purpose flour and then fried in oil ... really tasty too. I like adding a generous portion of cheese onto my pizza crust, before the sauce. It melts up and over a little onto toppings.
