These little layered dollar sandwiches are great for a lunch buffet or a quick afternoon snack.
Tortas are typically made in Mexico with teleras, a type of roll. Any firm roll will do and you can even use French bread. Feel free to mix and match ingredients. The finished product is similar to a hoagie.
Make as few or as many as you like. They can be prepared ahead of time or assembled and heated at the last minute.
Ingredients: 2 sourdough rolls or sections of French bread 2 jalapenos, roasted, skinned, and cut into thin strips (optional) 2/3 cup refried beans (prepared from scratch or prepared according to canned directions) 5 ounces roast beef or pork, cut in strips 2 tomato slices 2 slices Monterrey Jack or other favorite cheese
Directions: 1. Slice the rolls horizontally - make the bottom deeper than the top. Scoop out the bread from inside the bottom half. 2. Fill each bottom with bean mixture 3. Layer with meat, tomato, and jalapenos. 4. Place under broiler for just a few seconds to melt cheese slightly and crisp up top of roll or serve cold. 5. Can also top with lettuce or fresh cilantro. Chicken or any other type of filling can also be used.
