Ingredients:

8 tomatillos, remove husk and wash, cut in halves
2 chipotle peppers in adobo
1 small white onion, cut into quarters
2 chile de arbol
1 clove of garlic, minced
salt


Directions:

In a microwave-safe container (glass), add the tomatillos, onion, chile de arbol and about 1 cup of water. Cover with a paper towel and cook in the microwave for 4 minutes, stir, the cook for another 5 minutes. Transfer to a blender, adding the garlic, chipotles and about 2 teaspoons of salt, blend until smooth. Taste for salt. Serve warm or at room temperature. You could add some freshly chopped cilantro for a fresh touch of flavor!

 

Note: I learned this cooking method while I was in Mexico recently... wow... what a time saver!! Works well with Roma tomatoes, too!
