6 tomatillos, husk removed, rinsed and roughly chopped
2 serrano or 1 large jalapeno pepper, roughly chopped(seeding is optional)
1 small white onion, chopped
1 avocado(add 2 for extra creamy salsa)
Juice of 1 lime
Handful of chopped cilantro
2 teaspoons of salt
1/2 cup of water
Combine all of the ingredients in a blender or food processor, start by pulsing, then blend until smooth. Taste for salt, tomatillos tend to be quite tart. This salsa is great for crunchy tacos, taquitos and excellent on seafood or simply serve with totopos (tortilla chips).
