The social network that celebrates Latin food
Ingredients:
2 large cans (28 oz.) of Hunt's whole tomatoes
1 cup of "La Costena" pickled jalapenos, slices (with the brine)
1 cup of grilled white onions
Large handful of chopped cilantro
Juice of 1 lime (or 3 key limes), I do prefer the flavor of key limes
2 tablespoons of granulated garlic
1/2 tablespoon of pepper
Directions:
Combine all of the ingredients in the blender or food processor and pulse until you reach the texture that you like. Some of us like it a little more smooth or chunky ... taste for salt, add as needed. I came up with this recipe a couple of winters ago when fresh tomatoes were sooo expensive, but could not live without my salsa!! I know that in a lot of Tex-Mex restaurants they use canned tomatoes for their salsas, and I knew I liked them, so I tried it! I won a first place trophy last summer for this recipe... hahhaha... It stores well in the refrigerator.
Note: for a variation of the salsa, you could add chipotle peppers in adobo instead of pickled jalapenos... good, smokey, spicy flavors!

Comment by Ray A. on February 18, 2012 at 3:44am I use canned tomatoes for a quick salsa all the time. That's when I run out of my homegrown roasted jarred tomatoes ;) lol

Comment by Ray A. on February 17, 2012 at 4:24am I remember the year you all back east got the tomato blight. It even raised the prices here in the west.
