Makes 12 servings
½ lb. fresh salmon, cut into small cubes
¼ cup soy sauce
½ tablespoon sesame oil
½ tablespoon grated fresh ginger
1 stalk green onion, minced
1 cup finely chopped gherkins
sesame seeds, to taste
Place all ingredients in a bowl, and toss to combine. Adjust seasoning to taste. Refrigerate until ready to serve.
