Ingredients:
6 large shrimp with shells
1 "golden delicious" apple
1 carrot
¼ cup natural yogurt
1½ oz. apricot (or peach) marmalade
¼ oz. unsalted butter
1 tsp. apple cider vinegar
1¼ tsps. water
A dash of red coloring
1/8 oz. salt
1/8 oz. cornstarch
1/8 oz. red pepper
2 squash or zucchini
1/8 oz. black sesame
¼ oz. chili flakes (optional)

Preparation:
1. Clean the shrimp well.
2. For the salad, grate the carrot and apple, add yogurt and season.
3. For the sweet and sour sauce, put the apricot marmalade in a blender with water and add to a casserole dish containing butter. Add the apple vinegar, artificial coloring and a dash of salt. Thicken with flour.
4. Sautée the shrimp and taste the seasoning.
5. Serve with the salad and sweet and sour sauce.
