Sandwich Jíbaro (Puerto Rican Sandwich)

Ingredients:

1 cup vegetable oil for frying
1 medium green plantain, peel removed, cut lengthwise in half
½ tablespoon olive oil
1 filet of chicken, beef or pork
¼ yellow onion, finely sliced
salt to taste
iceberg lettuce leaves
"mayo-ketchup” (blend of ketchup, mayo and garlic salt)



Directions:

1. Heat the vegetable oil in a skillet on medium high and add the plantain. Fry for 10-15 minutes, until golden and well cooked.
2. Remove the plantain and let drain on paper towel. Chop up half the plantain with a knife or chopping tool. Then with a paper plate press down on the plantain until thin and flat, about 1/8 of an inch. Do the same with the other half. Take the flattened plantain and fry for a second time in the same oil until golden.
3. In another skillet heat the olive oil, add the onion and sauté for 2-3 minutes, adding salt and vinegar. Add the filet (beef, pork or chicken) and cook until done. Slice the meat.
4. To prepare the sandwich, place the plantains on a plate and add the meat, onion, lettuce and mayo-ketchup. If desired, cut sandwich in half.

It's delicious you really should try it.... if you are Puerto Rican I am very surprised that you haven't heard of this sandwich since it is one of our staple recipes....

I've never heard of it or seen but it looks so delicious....besides, any recipe made with plaintains  is a winner. I'm sure gonna try this one. Thanks for sharing.
