Quinoa con Hierbas y Nueces (Herbed Quinoa with Walnuts)


Yields 4 servings

 

Ingredients:

1 cup quinoa
1 clove garlic, minced
¼ cup finely chopped onion
2 tablespoons olive oil
½ cup chopped parsley
¼ cup finely chopped scallions
¼ cup chopped cilantro
¾ cup chopped walnuts
1 teaspoon salt

 


Directions:

1. Place the quinoa in a fine-mesh sieve, and rinse thoroughly under running water. Drain the quinoa, and place it in a skillet over medium heat. Toast the grains for two minutes.

2. In a heavy-bottomed pot, bring two cups of water to a boil. Meanwhile, sauté the garlic and onion in olive oil until tender and translucent.

3. Add the herbs, and continue to sauté until fragrant and wilted. Remove from heat, and add the walnuts. When the water boils, add the quinoa and herb mixture and stir to combine. Cover, reduce heat and simmer for 15 minutes, or until water is completely absorbed. Add salt and stir well.
