The social network that celebrates Latin food
I love cheese, but because my husband is not the biggest fan, I have learned to cook with very little. But, for a few years I was teaching Mexican cooking classes and they love cheese dishes! This is an easy, cheesy and delicious dish that comes together quickly. This is a must for any party or game day celebration. I like to add a variety of cheeses, try adding some smoked mozzarella or gouda, along with the jack, tasty! Enjoy!
Ingredients
8 ounce block Monterey jack cheese, shredded
¼ cup roasted, diced poblano
1/4 cup, roasted, diced red bell pepper
1/2 cup cooked Mexican chorizo (drain on paper towels after cooking)
On this day I had to make a big pan of queso fundido for at least 25 to 30 people..it was loaded with chorizo and rajas(poblano strips)! To prepare a large pan, I suggest you add triple of all the ingredients listed above.
Directions
1. Preheat oven to 350 degrees F.
2. Combine all ingredients in a small casserole dish and bake, covered, in a preheated 350º F oven for 20 minutes. Uncover and cook under broiler for 2 minutes. Serve with chips, crostini or as a taco filling.
Notes: For a variation, you could add some cooked shrimp on top, drizzled with barbeque sauce or shredded chicken drizzled with a spicy buffalo sauce.
