The social network that celebrates Latin food

During one of my recent trips to Florida, I saw a picture of a pineapple upside-down pancake and immediately my mouth watered. It's been in the back of my mind and today is the day. I had no recipe; this is my interpretation.
As I write this, the husband is at the market buying some ingredients.

This was so good that husband is making himself another batch. He claims the first one was a tease and it was.
Ingredients:
Your favorite pancake recipe. I used 1 cup of prepared mix adding 1/8 teaspoon of baking powder with 1/2 teaspoon vanilla extract, one egg and enough whole milk to make the batter.
For pineapples: 1/4 cup brown sugar, 4 tablespoons of butter and 4 tablespoons of coconut rum.

Ingredients (continued):
butter for grill
confectioner's sugar for dusting
maraschino cherries and mint for garnish.
Instructions:
Make batter and set aside to rest.
In a frying pan heat butter with brown sugar, add pineapples and rum. Cook until pineapples are coated and sause thickened.
Prepare your grill adding butter until hot but not brown and pour batter. Once pancake starts to bubble place pineapple, cherry and some of the sauce. Flip pancake, once cooked on other side serve with remaining sauce and sprinkled with confectioner's sugar.

Dip the rim of your glass in maraschino juice and cover with sweet flaked coconut. Take three slices of pineapple and blend with pineapple juice. Pour into prepared glass and fill with your favorite sparkling wine. Cava is used in my "casa".
