Makes 4 servings
Ingredients:
¼ cup olive oil
2 tablespoons butter
4 cloves garlic, sliced
1 lb. fish fillet
salt to taste
green and red bell pepper, deseeded, chopped finely into squares or cubes
chopped fresh parsley, for garnish
Directions:
Heat the olive oil and butter in a medium skillet. Add the garlic and sauté over medium heat for 2 to 3 minutes, until lightly golden. Add the fish and chopped bell pepper, and cook for 5 minutes. Season the fish with salt, and garnish with chopped parsley.
