Ingredients:
2 cups white hominy
2 roma tomatoes, seeded and diced
2 serrano peppers, diced
1 small white onion, diced
1/4 cup chopped cilantro
juice of 2 key limes
1/2 tablespoon Tajin chile limon powder
salt and fresh cracked pepper
Directions:
Combine all of the ingredients, adding about 2 teaspoons of salt and 1/2 teaspoon of pepper, stir well, taste for salt and let the salsa stand at room temperature for 30 minutes.
