Frijoles Borrachos con Chorizo (Drunken Pinto Beans with Chorizo)

Ingredients:

4 cups pinto beans, cooked
1 medium white onion, diced
2 cloves garlic, minced
1 large jalapeno, minced or 1 serrano
Handful of chopped cilantro
½ cup Mexican chorizo
12 oz. of Mexican beer
salt and fresh cracked pepper
canola oil

Directions:

1. Heat 1 tablespoon of canola oil to medium heat, add the chorizo and cook for 3 to 4 minutes. Add the onions, garlic, peppers and cilantro, stir well to combine and cook for 2 minutes.

2. Add the beans and the beer, stir well to combine. Bring to a boil, taste for salt and pepper, season as needed. Reduce heat and cook for 20 minutes.

3. Garnish with lime wedges, cilantro, avocado and serve with warm corn tortillas.
Variation: Instead of chorizo, you could use diced bacon, then follow the recipe the same... Yummy! You could also use the soy chorizo and light beer for a low-fat version.

I have never soaked my beans overnight either, I just rinse them then cook them for a few hours too....the salt thing is something my parents always mentioned to do last, not sure ...but hey whatever works, lol! Going to cook some beans today...will add the salt with the garlic....i am always learning something new, and I love it!!!!

Sonia, my beans take about 2 1/2 to 3hours to cook...I have not experienced them hard on me ever for adding salt at the beginning...Maybe thats if you soak them over night...I have never soaked them only made them a few hours before we were going to eat so that they would be ready...Funny you mention that though...My mom  called me a few weeks ago because apparently my stepdad soaked his beans overnight...ha ha his beans were still hard even after cooking them for a few hours...My mom was so frustrated...I will definitely check out the Drunken Pinto Beans with Bacon...that sounds good too...If I wasn't already full from your burritos lol I'd be starving :)

How long do your beans take to cook?? My parents always told me not to add the salt until the beans were almost cooked all the way through or they may be hard....has that ever happened to you??

These look sooooo good too!!! I'm going to try these next weekend :) SOOO perfect for cold weather.  I make homemade frijoles...I season raw beans with garlic powder, chile powder, salt, cumin and pepper, cover with water and I boil with a smoked ham hock...Such great flavor for them I've found :)  These sound good to have all by themselves with tortillas...Great for cold weather :) Thank you again for sharing!!!
