Ingredients:

8 tomatillos
2 jalapenos
2 cloves garlic
¼ cup red onion, finely diced
Handful chopped cilantro
juice of 1 lime
Salt
 
Directions:

1. Remove the husks from the tomatillos and wash off. Roughly chop the tomatillos, jalapenos and slice the garlic. Transfer to the blender or processor, add the lime juice and 1½ teaspoons of salt. Pulse 7 to 8 times to achieve a coarse-looking salsa. Taste for salt, then transfer to a bowl. Fold in the red onions and cilantro, cover and let sit for 20 minutes. Serve at room temperature.

Note: The tomatillos will release a bit of water. You could drain some of it, so that your salsa is not so watery.
