Makes 10 servings

 

Ingredients:

 

3 lbs. (8 cups) potatoes, diced
4 hard-boiled eggs, finely chopped
¼ cup finely chopped onion
½ cup finely chopped green bell pepper
1 cup mayonnaise
salt to taste

 

Directions:

 

Fill a large pot with 12 cups of water and 3 teaspoons of salt, and bring to a boil. Add the potatoes, and cook over medium heat for 20 minutes. Drain and let cool. In a large bowl, combine all of the ingredients, season to taste, and refrigerate until ready to serve.
