Makes 4 servings
1 cup oil
1 green bell pepper, finely chopped
1 medium onion, finely chopped
2 cloves garlic, finely chopped
2 lbs. boiled lobster meat, cut into large pieces
½ cup dry white wine
1 (6-oz.) can tomato sauce
1 teaspoon black pepper
½ teaspoon salt
1 bay leaf
1 (6-oz.) can pimiento peppers
¼ cup chopped parsley
1 tablespoon vinegar
1 teaspoon Tabasco® sauce (optional)
1. Heat oil in a deep skillet or Dutch oven, and add the green pepper, onion, garlic and lobster meat. Sauté for 5 minutes.
2. Add the wine, tomato sauce, black pepper, salt, bay leaf, pimientos (including the canning liquid), parsley, vinegar, and Tabasco sauce. Cook for 20 minutes over low heat until sauce reaches desired thickness.
Serve hot, accompanied by white rice.
