Makes 12 empanadas
Ingredients:
12 puff pastry-style empanada discs
2 tablespoons olive oil
1 large onion, chopped
1 red bell pepper, chopped
1 lb. ground beef
2 hard-boiled eggs, chopped
Chopped green olives, to taste
Salt and ground black pepper to taste
Beaten egg, for brushing
Directions:
1. Heat the oil in a skillet, and sauté the onion and bell pepper until tender.
2. Add the ground beef and stir. Season with salt and pepper, and cook over medium heat until the beef is browned. Add the eggs and olives. Thoroughly mix together all the ingredients, and chill the mixture.
3. Once the filling is cold, place a heaping tablespoon of the ground beef mixture in each empanada disc. Lightly dampen the edges of the dough with water, and firmly seal the empanadas shut by crimping the edge with a fork.
4. Place the empanadas on a greased baking sheet, and brush the tops with beaten egg. Bake in an oven preheated to 375ºF for about 15 minutes, or until golden brown.
