Delicadas de Limón

Being a fan of citrus and especially citrus-inspired sweets (and apples too, but I digress), this lemon-based dessert from Puerto Rican TV chef Cielito Rosado is right up my alley. And so simple to make and quick, too.

Cielito is sharing her recipes with Hispanic Kitchen. On behalf of Cielito, enjoy!



Ingredients:

For crust:
2 sticks of sweet butter
2 cups all-purpose wheat flour
1 cup confectioner's sugar
½ teaspoon lemon zest

For lemon mixture filling:
4 eggs
1 cup sugar
½ cup lemon juice
½ cup cake flour
½ teaspoon lemon zest


Directions:

1. Preheat oven to 325ºF.
2. In an electric mixer, mix the butter until creamy smooth. Add the all-purpose wheat flour little by little, stirring constantly and add the sugar and lemon zest. Pour the mixture into a greased baking mold, size 13 x 9 x 2.
3. Bake for 15 minutes. Prepare the filling. Mix the eggs and sugar until creamy. Add the lemon juice, flour and lemon zest. Pour the mix over the crust.
4. Bake at 325 for 30 minutes. Let cool, cut into squares and dust with confectioner's sugar.

These look yummy! I make my lemon chess squares but there are only two eggs, I think that's why your's look denser. Great post!
