I remember as a kid, how my Mom would add cabbage to her "Caldo de Res", beef and vegetable soup. I always thought that was my favorite way to eat cabbage. One day while making her beef soup, my Mom had a piece of cabbage left over. She shredded it for me and added a little fresh lemon juice and salt. Wow! It was the greatest thing since jicama with chile and lime! I think because of enjoying the cabbage fresh all those years, I also prefer my coleslaw made without mayonnaise. This recipe is great as a side and super tasty for tacos too!

 

Ingredients:

4 cups green cabbage, finely shredded
1 cup radishes, sliced like matchsticks
3 green onion, sliced
1/4 to 1/3 cup cilantro, chopped
1 serrano or jalapeno, minced (seeds removed)
Juice of 1 lemon
1 tablespoon olive oil
1/2 teaspoon oregano
1/2 teaspoon salt
1/4 teaspoon pepper


Directions:

Combine all of the ingredients in a medium bowl. Toss with tongs, then taste for salt. Cover and chill for 1 hour before serving.

Tip: For even better flavor, allow to marinade in the lemon juice and spices and consume the next day.

That is awesome Cynthia!!!! Fifteen years ago, I went on my own journey too and lost a total of 76 pounds... everyday is a struggle, but I have maintained and would call myself average, hahaha...i think about it everyday ...good for you!!!

Well my husband and I did it for our health. We started last April and I have lost 57lbs and 4 going on 5 pants size. He lost 60 lbs and 6 pants size. We did the Engine 2 Diet. It is the best thing we did.

Cynthia,this slaw would be absolutely delish as a topping for roasted veggie and black bean tacos...have you tried some nopales??? I love those too!

Wow Cynthia, how long have you been vegan?? I have a couple of friends who are also....will keep that in mind. I love a good challenge when it comes to food!
