Makes 20 servings
Ingredients:
¼ cup butter
½ cup finely chopped onion
1 teaspoon minced garlic
½ cup flour
1 cup milk
½ cup finely chopped fresh parsley
2 cups minced smoked ham
pinch of black pepper
pinch of ground nutmeg
For the breading:
1 cup flour
3 to 4 eggs
½ cups cracker crumbs
oil, for frying
Directions:
1. Heat the butter in a saucepan, and then add the onion and garlic. Sauté for 2 to 3 minutes. Add the flour and cook until it forms a paste. Slowly add the milk, and then stir in the parsley and ham. Cook until it forms a thick mixture. Add the black pepper and nutmeg. Allow the mixture to cool.
2. Take heaping tablespoons of the mixture, and form them into croquettes. Dredge the croquettes in flour, dip them in egg, and roll them in cracker crumbs. Dip them a second time in the egg and cracker crumbs.
3. Fry the croquettes in oil until golden brown. Serve with your favorite sauce.
