Makes 2


Ingredients:

½ loaf of raisin bread, cut lengthwise (you can use baguette or hoagie bread if you prefer)
1 chorizo sliced thinly
2 slices Swiss cheese
½ tbsp. chopped onion
pinch of oregano
pepper to taste
1 egg, lightly beaten
2 slices tomato
1 leaf of lettuce
mayo


Directions:

1. In the microwave, melt 1 slice of cheese. Place the chorizo, onions, oregano and pepper and cover with the other slice of cheese. Cook in the microwave 30-40 seconds (time depends on your oven) until the second slice melts.

2. Beat the egg and season to taste to make a little omelet. Set aside the omelet.

3. Toast the bread and spread mayo on each slice of bread. Place the melted cheese and chorizo on the bread, the omelet, lettuce and tomato and cover with the other slice of bread.

4. Cut in two pieces and serve immediately.
