This steak dish is lightning fast to make. Prep time is only 5 minutes and cooking time only 15 minutes. Perfect for the middle of the week when we're feeling a little stressed, short on time - and patience...

Servings: 4

Ingredients:
4 strip loin steaks or 1 lb. top sirloin steak, 1 inch thick

Stuffing:
2 cans (4 oz. each) diced green chilies
1 tbsp. olive oil
4 medium cloves garlic, minced
¼ tsp. dried oregano leaves
¼ tsp. black pepper
4 tsp. fresh cilantro, minced

Rub:
1 tsp. black pepper
1 tsp. garlic salt
1/8 tsp. cayenne pepper (optional)

Instructions:
1. Cut a horizontal pocket in each steak to prepare for stuffing.
2. To make stuffing: heat oil in non-stick skillet over medium heat. Add green chilies, garlic, oregano and pepper. Cook, stirring, 4 minutes. Remove from heat and add cilantro.
3. Stuff each strip steak with one-fourth of chili mixture.
4. Lightly season both sides of steaks with rub mixture. Grill steaks 4 to 6 inches over coals for 12 minutes total, turning once.

Serving Suggestions:
corn-on-the-cob, black bean salad and grilled tortillas.

This looks fantastico, making it tonight with Green Chile Risotto and Mango-Jicama-Avocado Salad in Cilantro-Lime Vinaigrette. Should be fit t'eat.
