The social network that celebrates Latin food
Ingredients:
1/2 cup Mexican chorizo sausage, chopped
1/2 cup red bell pepper, chopped
3 green onions, chopped
1¾ cups flour
1 tablespoon sugar
2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/8 teaspoon chipotle powder
1 egg
3/4 cup buttermilk
1 tablespoon honey
1/4 cup vegetable oil
1 cup shredded monterey jack cheese
Directions:
Preheat oven to 400ºF. Spray 9x5 loaf pan with nonstick baking spray and set aside. In a heavy skillet, cook the chorizo with red bell pepper until chorizo is cooked through, stirring to break up sausage. Drain well, remove from heat, stir in green onions, and cool.
In a large bowl, combine the flour, sugar, baking powder and soda, salt and chipotle powder and stir to combine. In a small bowl, combine egg, buttermilk, honey and vegetable oil and beat until well combined. Add cheese along with chorizo mixture and stir gently.
Pour batter into prepared pan and bake at 400ºF for 30 to 40 minutes until bread is deep golden brown and bread pulls away from sides of pan. Remove from pan and cool slightly on wire rack. Cut into thick slices and serve warm.
Variations for a lowfat version; you can use vegetarian mexican chorizo and lowfat cheese. I have used the vegetarian chorizo many times, it has the same flavors ... and is delicious!

My goodness.....my mother has been my inspiration for ever...she passed away Oct 2011....I miss her so much! She is still my inspiration! Miss her so much.....Elena

I remember when i first was married and moved soooo far away from home, my Mom would send me boxes filled with Mexican groceries, because there was nothing up here....gosh, i would get soo excited to get them!!! Really brings tears to my eyes remembering that...I lost my Mom in 2009...she was and continues to be my inspiration when I cook.
Yep....been doing it for over 2 years. My son is an environmental engineer, works for a contractor for the US Government on the Island of Kwajalein....there are only 2100 people there and he has limited supplies....So since I am the Mom I help him out. I don't know how much I have spent on goodies and shipping.....but he sure appreciates my care packages!
