Following are recipes for Camarones Fritos (Fried Shrimp) and for the Hot Sauce.
Makes 4 servings
2 lbs. shrimp
1 cup ketchup
1 tablespoon freshly ground black pepper
¼ teaspoon ground cumin
1 tablespoon garlic powder
1 tablespoon salt
1 tablespoon fresh lime juice
oil for frying
In a medium bowl, combine the ketchup, pepper, cumin, garlic powder, salt and lime juice. Dip the shrimp in the ketchup mixture, and then dredge lightly in flour. Heat the oil in a large frying pan. Carefully place the shrimp in the pan, and fry over high heat for 3-4 minutes.
Salsa Picante (Hot Sauce) for Shrimp
Makes 2 cups
2 serrano chiles, deseeded, and ground
1 tomato, diced
¼ cup fresh cilantro, chopped
¼ cup chopped onion
juice of 2 lemons
3 tablespoons white vinegar
Place all ingredients in a bowl and mix well. Cover and refrigerate. May be prepared up to 4 hours in advance.
