The social network that celebrates Latin food
Ingredients:
4 cups shredded chicken (cooked)
1/3 cup Cholula brand hot sauce, plus more for garnish
12 corn tortillas
2 cups canola oil
Toothpicks
4 cups lettuce, shredded, set aside
2 Roma tomatoes, sliced thin, set aside
1 small red onion, sliced thin, set aside
Pickled, sliced jalapenos, set aside
For Cilantro Lime Rice:
1 cup long-grain rice
2 cups water
2 teaspoons salt
Juice of 1 lime
1/3 cup chopped cilantro
For Avocado Salsa:
5 tomatillos (about 2 cups), chopped
1 avocado
2 serrano peppers, chopped
1/4 cup white onion, chopped
1/3 cup cilantro, chopped
Juice of 1 lime
1/3 cup sour cream
1/3 cup water
2 teaspoons salt
Directions:
1. Start by making the avocado salsa. In the blender, combine the tomatillos, avocado, serranos, onion, cilantro, lime, sour cream, water and salt. Blend on high until smooth, taste for salt. Cover and refrigerate until ready to use.
2. For the rice, in a medium sauce pan, heat the 2 cups of water, add the salt. When it comes to a boil, add the rice, stir well. Reduce the heat, cover and cook for 15 to 18 minutes or until water is absorbed. Remove from heat and set aside.
3. In a heavy saute pan, heat 2 cups of oil to medium heat. While the oil is heating up, combine the shredded chicken and the Cholula brand hot sauce, stir well to combine, set aside.
4. Wrap 4 corn tortillas in paper towels and heat in the microwave for 45 to 50 seconds. This will help to soften the tortillas and make it easier to roll. Fill one tortilla at a time with a couple of tablespoons of chicken, roll as tight as you can and secure with a toothpick on the seam. Fry in hot oil, turning once, until both sides are crispy. Drain, standing up in a bowl lined with paper towels.
5. At this time, fluff the rice with a fork, add the cilantro and lime juice, taste for salt. Remove the toothpicks from the flautas. On a plate, add some lettuce, 2 or 3 flautas, avocado salsa, tomato and red onions with 1/2 cup of rice on the side. Squeeze some fresh lime juice all over, and a pinch of salt.
