This is a simple dish that can be made ahead of time because the flavors only get better! I have a friend who grows her own garlic and I love creating some dishes that feature garlic. For many, many years I stayed away from chicken thighs, more so for the health benefits and less fat content. But, I will have to admit that you get so much more flavor and moistness from the chicken thighs. So, once in a while I like to use them in my dishes, all in moderation, I say. My Mom did cook a lot of chicken thighs and drumsticks as I was growing up because with a family of 10, it was more economical.

 

Ingredients:

6 to 8 chicken boneless thigh pieces
1 small sweet onion, diced
10 to 12 cloves garlic
1 small poblano pepper, sliced into strips
1 small red bell pepper, sliced into strips
1 teaspoon smoked paprika
1 teaspoon cumin
2 teaspoons Knorr chicken bouillon
Salt and pepper
3 tablespoons sherry for cooking
1 light beer- 12 ounces
Olive oil

 

Directions:

1. In a large skillet, heat about 1/8 of a cup of olive oil to medium/high heat. Season the chicken with salt, pepper, cumin, and smoked paprika. Cook for a few minutes on each side until browned nicely.

2. Remove chicken thighs from pan and transfer to a plate.Reduce heat on pan to medium, drain a little of the oil from pan, add the onions and peppers and cook for 3 minutes, add garlic and cook for another minute.

3. Carefully deglaze the pan with the beer and stir to pick up all the bits on the bottom of the pan. Add the sherry and bouillon powder, stir well to combine. When it comes to a boil, taste for salt and add the chicken thighs back in. Cover and reduce heat slightly, cook for a good 40 to 50 minutes, until sauce reduces and concentrates.

4. I like to serve chicken with fresh steamed vegetables, like broccoli or your favorite rice dish. I garnished the top with some quick lime pickled habanero slices and lime wedges. Yields up to 4 servings( 2 pieces per person) if chicken thighs are smaller.
