The social network that celebrates Latin food
Ingredients:
2 small zucchini (about 3 cups sliced)
2 eggs
2 tablespoons of Tapatio or Cholula brand hot sauce
3/4 cup flour
1 cup panko bread crumbs
6 Saltine crackers, crushed
1/3 cup freshly grated Parmesan
2 tablespoons finely minced cilantro
1 tablespoon finely minced fresh oregano
1/2 tablespoon crushed jalapeno flakes
1/2 teaspoon ground cumin
Salt and pepper
Directions:
1. Wash the zucchini and slice into french fry slices. Lay on flat surface and pat with paper towels to soak up any extra moisture. Preheat oven to 425ºF. Line a large cookie sheet with parchment paper or easy release foil paper, set aside.
2. Prepare your breading station. In one bowl add the flour and season with 1 teaspoon of salt and 1/2 teaspoon of pepper, set aside. In the second bowl combine the 2 eggs with 2 tablespoons of hot sauce, whisk together. In the third bowl, combine the panko bread crumbs, crushed Saltines, Parmesan cheese, crushed jalapeno, oregano, cumin, cilantro, 1/2 teaspoon salt and pinch of pepper, stir well to combine.
3. Take 4 zucchini fries at one time and first dredge in flour and shake excess flour off, then into egg mixture, also gently shaking excess egg off, and finally gently roll in the bread crumb mixture. Lay onto lined cookie sheet, repeat until all are done. Bake for 11 minutes, carefully turn over and bake for another 11 minutes. Makes an almost full sheet tray of fries. Yields 5 servings. Serve with your favorite hot sauce or dipping sauce.
Note: If you cannot find the crushed jalapeno, you can substitute with crushed red pepper flakes. When you start to bread the zucchini fries, it's best to get right in there and use your hands. Try to keep one wet hand and one dry hand. If you have leftovers, just store in single layer in airtight container and reheat in a dry, nonstick skillet.
I always have hot sauce or wing sauce in my pantry. This garlic wing sauce worked well for a dipping sauce! This is from our local chicken wing place!
