3 ripe, large avocados
1 chicken breast with skin removed
Mayonnaise to taste
½ teaspoon of mustard
1 slice of hard-boiled egg
1 or 2 slices of red pepper
Black olives as garnish
Peel the avocados and cut them length-wise into halves, removing the skin. Season the inside of the avocados with salt and lemon.
Prepare the filling by cutting the chicken breast and mixing it with mayonnaise. Pepper to taste and ½ a teaspoon of mustard.
Fill the avocados with the mix and cover with mayonnaise. Garnish with a slice of hard-boiled egg and slices of black olives.
Place each avocado on a lettuce leaf and lay in a circle.
