One of my favorite foods to cook that reminds me of home is guisado, carne guisada of any kind, slow cooked in a sauce, served with warm corn tortillas... pure comfort food!

 

 

Yields 5 servings

Ingredients:

2 pounds pork steak, cut into bite-size pieces
1 small white onion, diced
3 cloves garlic, minced
1 Roma tomato, diced
1 small yellow sweet pepper, diced
1 small zucchini, chopped (about 2 cups)
2 -7 ounce can of diced green chiles (mild)
1 teaspoon cumin seeds, crushed
½ teaspoon coriander seeds, crushed
Salt and pepper
½ cup water
2 tablespoons olive oil

 

Directions:

1. In a large saute pan, heat 2 tablespoons olive oil to medium-high heat. Let it preheat for 2 to 3 minutes. Add the pork and season with 1 teaspoon salt, ½ teaspoon pepper, cumin and coriander. Cook stirring often until pork is nicely browned.
2. Add the onions and garlic and cook for 2 minutes. Add in the remaining ingredients, stir well to combine, taste for salt. Lower the heat, cover and continue cooking for 30 to 40 minutes until the sauce reduces and becomes thicker.
3. Serve with your favorite sides of rice and beans and warm corn or flour tortillas.

Sure Crimson, the beans are simply pinto beans that are combined with sauteed onions and garlic, about 4 cups pinto beans,1 small onion, 2 cloves garlic, 1 cup chile New Mexico puree, and seasoned with a little cumin, oregano, salt and pepper. I add a little water or chicken broth and when they simmer for a few minutes, I use a potato masher to make them creamy or you can also throw them into the blender. I have a recipe right on here for Chile New Mexico sauce....if you need anything else just let me know...I can type up a better recipe for you...:)
