Sopa de Lentejas

The beauty of this Colombian style lentil soup is that it is super easy, and is just as tasty when it's only lukewarm as it is when it's hot.

A version of…

Tumbet Mallorquin (Majorcan Baked Vegetables)

Right now I am having a love affair between two chefs.  Call it a foodie "Ménage à trois."  Chef Eric Ripert of the famous Le Bernadin Restaurant (my all-time favorite) and…

Fajitas for a Crowd

EVERYONE loves fajitas, it's easy to see why. It's an entire meal rolled up in a fluffy tortilla -- veggies, chicken (or beef, or shrimp...) some spicy salsa, and you're in a grilled up heaven.

This…

Quinoa Stuffed Acorn Squash

I love Thanksgiving meals that offer a new twist on traditional flavors, adding even more comfort to the ultimate comfort meal. I love watching our family's holiday food traditions evolve over the years to suit our changing tastes. And I love when those changes take our Thanksgiving spread from good to sublime. Quinoa Stuffed Acorn Squash certainly fits the bill. What makes this quinoa-based stuffing so fantastic is more…

Pisto Manchego - One Hot Tapa

The thing I love most about Pisto Manchego is that it is so... Spanish. The combo of roasted red pepper, eggplant, and zucchini with garlic, onions and spices goes by different names all over the Mediterranean sea -- ratatouille, briami... but whatever it goes by, the regional variations are minimal. Despite that, somehow, in true…

Anticuchos: Peruvian Skewers for Summer

Call them kabobs, skewers, pinchos, or anticuchos, there’s nothing better than meat on a stick. Perhaps they invoke feelings of the ultimate summer barbecue, or they make me think of some childhood favorites.…

Queso Fundido (Loaded)

The cheesy goodness of queso fundido is hard to beat. It's one of those dishes that you can adapt with whatever veggies and meats you have available. My favorite style includes mostly grilled ingredients. This reduces the oils involved, since it's easy to "overdo" cheese just a bit, which causes it to separate. Luly’s Chupe

Hispanic recipes for the college student – Mom’s style

“I don’t think I can survive on cafeteria food or fast food for 4 years, Mom!” was one small complaint my 17-year-old daughter had when she was accepted into college this past fall. She said that she would rather cook on her own than eat what might not taste as good as a home cooked meal. So, we have started a series of Saturday “cooking adventures” that will – hopefully – give her the knowledge to reproduce, in college,… Continue
