Shrimp Cocktail in Avocado Bowls

A good old shrimp cocktail is the best appetizer... cheap, quick and easy. Of course, growing up, shrimp cocktail meant cold shrimp getting soggy and rubberyas it rested on a bed of ice, and a store bought jar of cocktail sauce that had to be beaten to be…

Beef Brisket Tacos

Beef Brisket reminds me of family gatherings back home. Our birthday parties were nothing like the parties my kids attend. We didn’t have theme parties at Chuck E. Cheese’s or at the bowling alley; we had a big family gathering with all the cousins, aunts, uncles, grandparents,…

Pupusas...Funny Name, Delicious Meal

Pupusas may be a typical choice for Salvadorean cuisine, but they certainly have changed my life since began making them a few years ago. You know how busy life can get.  So busy that, in this country at least, more than $110 billion dollars will be spent on fast food in one year.…

Pechugas Rellenas (Stuffed Chicken Breasts with Serrano-Mushroom Sauce)

Pechugas Rellenas (stuffed chicken breasts) are the empanadas of poultry. Just like the versatile pastry, every country, region, and – of course – every individual cook will have a different recipe. Chicken Kiev is a familiar version with its buttery filling, and is perhaps the predecessor to Chicken Cordon Bleu. A Turkish recipe, Ispanakli Tavuk Dolmasi, translates to spinach stuffed chicken breast while India's…

Pumpkin Empanada

Growing up we always knew the fall and winter meant lots of sweet and tasty treats we call empanadas. These sweet pastry pockets are filled with whatever jam or preserves are in season and or whatever you were lucky enough to preserve over the…

Elote con Crema

Fiesta is a popular grocery store here in Houston, it caters to almost every culture of the world. We have a very large Mexican-American population here in Houston, so it makes sense to find a lot of Mexican influences throughout the store, including the parking lot. Yes. The parking…

Camarones Entomatados (Shrimp in Spicy Tomato Sauce)

Shrimp, shrimp, shrimp. I cannot get enough shrimp. I could eat them in the morning, I could eat them in the dark, I could eat them all day long. That was kinda corny, wasn't it? I didn't promise musical abilities or poetry, I can cook, that's the gift the muse saw fit to bestow upon me. It's a good gift,…

Camarones al Chipotle (Chipotle Shrimp)

I love salsa. I think I could live on chips and salsa. If only I wouldn’t be SERIOUSLY lacking in other nutrients. As a matter of fact, I don’t even really care about the chips. It’s the salsa. Smoky or tangy, spicy and fresh, I love green, red, pico de gallo, but especially chipotle…

Plantain-crusted Tilapia

Menu after menu, restaurant after restaurant, plantain crusted fish was the common denominator during my amazing visit to San Juan. Thanks to a large group of fellow travelers, I was able to try the San Juan specialty in about 12 different restaurants during my 10 day trip. So after much trial and error in my kitchen at home, I finally figured it out...it's almost too simple to be true. Not to mention, who…

Pan Fried Trout with Guatemalan-Inspired Radish Salad

I would be lying if I told you that I wasn't a little proud of my garden right now. Last week we harvested radishes and mustard greens by the boat load. I've made all sorts of recipes with them. I made radish chips, wilted mustard greens, mustard green frittatas, and now I'm making Pan Fried Trout with Guatemalan Inspired Radish Salad. Trout is also in season right now.

Our trout comes from the cool creek waters in the mountains…

Cook From Your Pantry: Decadent Jalapeño Spoon Bread

This year as a result of the severe economic downturn, people have learned to do more with less. Cutting back has been the name of the game in the kitchen as well. But that doesn’t have to mean that your end product is any less delicious. Learning to cook with what you already have on hand is one of the easiest ways to save some dough.

My recipe for jalapeño spoon bread is a great example of using what you already have to cook a… Continue

Plantains: Delicious and Versatile!

Plantains are a huge part of cooking in the Caribbean, Central America, and South America and appear in a variety of the most traditional dishes. Though indigenous to Southeast Asia and Australia, plantains became an important ingredient in the New World due to an extremely popular trade of the product beginning as early as the 1500s. Currently, a large part of plantain production and farming is based in the Caribbean, the Southern tip of… Continue
