There are different versions of Guanimes made in Puerto Rico. Some are made with flour, others with cornmeal.
I learned from Mom to make them with cornmeal. I mix cornmeal with salt and butter (or shortening) add boiling water to get a polenta type consistency, then by big spoonfuls put the batter on wet paper for pasteles, fold to make a packet. Tie with string and add the guanimes to boiling water and cook for about 20 minutes. Cut string, unwrap guanimes and serve with stewed codfish. Very good and stick to your ribs kind of meal!
