Yautía in Cilantro Pesto Sauce


6 to 8 Servings

Ingredients:
6 cups of yautía (also known as malanga), cut into chunks and boiled
½ cup pure olive oil
½ cup vinegar

Cilantro Pesto Sauce:
½ cup olive oil
1 cup chopped fresh cilantro
¼ cup grated parmesan cheese
1 teaspoon mashed garlic
2 tablespoons chopped walnuts

Directions:
1. In a blender, mix all the pesto sauce ingredients until a pasty consistency is reached. Set aside.
2. In a salad bowl, place the boiled yautía with the other ingredients; season to taste and leave in the fridge until time to serve.

The dish can be served hot or warm.

I am unfamiliar with yautia....what is the the texture and flavor like?? Like a potato??
