Number of servings: 4
Ingredients:
1 large yuca, peeled, and sliced into 1/4-inch pieces
1/4 cup cilantro
1/4 cup parsley
4 cloves garlic
2 limes, zested and juiced
Olive oil, as needed
Salt and pepper, as needed
3 tbsp oil, or more as needed
Salt, to taste
Directions:
1. In a food processor, pulse the cilantro, parsley, and garlic
until finely chopped. Add the lime juice and zest, and pulse until
combined.
2. With the food processor running, add the olive oil slowly until
the mojo is smooth and has a sauce-like consistency. Season with
salt and pepper.
3. In a large sauté pan, heat the oil over medium heat. Add the
yuca slices in a single layer in the bottom of the pan (you may
have to work in batches, replacing the oil as necessary).
4. Saute until the yuca is golden and tender, about 7-9 minutes.
Season with salt, and serve with mojo.
