Recipe by Puerto Rican chef Giovanna Huyke, "Cocina con
Giovanna"
Ingredients:
2 lbs. cleaned mussels
3-4 tablespoons butter
½ cup white wine or white vermouth
salt and pepper
1 tablespoon oregano
3 tomatoes, chopped
Juice from 1 lemon
Aluminum foil
Directions:
1. Cut foil into a square large enough to accommodate all the
mussels.
2. Place the mussles over the aluminum foil with the rest of the
ingredients and close up the corners of the foil.
3. Place on the center of the grill, adjust heat proximity and cook
covered for 45 minutes or until done.
