Ingredients:
4 cloves of garlic
2½ guaque chiles (dried)
¼ cup finely chopped cilantro
2 tablespoons of honey
3 tablespoons of vegetable oil
2 tablespoons of balsamic vinegar
½ tablespoon of ground cumin
8 de-boned chicken breasts
Lime juice
Pepper to taste
Directions:
1. Using a food processor or blender, add the garlic and chile
guaque, and process until they are finely chopped. For the best
results, soak the chiles in boiling water until they soften before
placing in the food processor. Immediately add the cilantro, honey,
oil, vinegar, lime juice, cumin and black pepper, and process some
more until they form a uniform mixture.
2. Pour the mixture onto the chicken breasts, cover, and
refrigerate for a while or overnight. The result is better if the
chicken is sealed in an airtight plastic bag or container.
3. After marinating the chicken, place on a heat resistant sheet or
pan and bake at approximately 350 F. Bake the chicken for 8 minutes
on each side until it is well cooked inside.
