This is a classic Cuban side dish. It is also known simply as
fufú.
Number of Servings: 6-8
Ingredients:
4 green plantains
1 lb. pork belly to make pork rinds
2 tablespoons lemon juice
4 cloves garlic
1 tablespoon vegetable oil
Salt to taste
Directions:
1. Cut off the ends of the plantains, make a deep incision all
along the thick peel to easily pry it off. Cut plantains into thick
rounds and drop into boiling water with salt and lemon juice. Turn
heat to low and simmer until tender.
2. Peel the garlic cloves and mash them.
3. Cut the pork belly into small pieces and fry them until they
lose the fat and the skin starts to bubble. At this point you
should have pork rinds.
4. Mash the boiled plantains, mixing the plantain with the pork
rinds.
5. Saute the mashed garlic in a little bit of oil.
6. Blend the garlic into the plantain/pork rind mix.
7. Serve hot and garnish with lemon wedge.
