Ingredients:
2 cloves of garlic, chopped finely
1 medium onion, chopped
2 tablespoons of vegetable oil
1 pound of lean, ground beef
2 pounds of canned tomatos, chopped
2½ cups of water
2 fresh tomatos, peeled, deseeded, and chopped
1 chopped green chile
2 tablespoons of chile powder
1 tablespoon of paprika
1 tablespoon of thyme
½ teaspoon of dry oregano
½ teaspoon of dry basil leaves
½ teaspoon of cayenne pepper
½ teaspoon of salt
1 pound of canned red beans, rinsed
½ cup of coarsely grated cheddar cheese
½ cup of coarsely grated Swiss cheese
Directions:
In a stewpot, sauté the garlic and onion in the oil until soft. Add
the ground beef and cook until well done. Drain the oil from the
pot and add the canned tomatoes, water, fresh tomatoes, green
chile, spices, and red beans. Bring to a boil, then reduce heat and
simmer over low heat for 2½ to 3 hours. Serve in soup bowls and top
with the grated cheeses. Serve with garlic bread.
