Servings: 4
Ingredients:
1 chicken (in 8 pieces)
2 oz. of butter
6 pasa chiles
½ pound of miltomates (sour green tomatoes)
2 heads of garlic
2 oz. ground pumpkin seeds
1 oz. of sesame seeds
20 almonds
2 oz. of sugar
1 tablet of chocolate
2 cloves
1 stick of cinnamon
1 teaspoon of oregano
Salt and pepper to taste
Directions:
1. Boil the chiles. Fry or roast the miltomates. Add the miltomates
to the chiles along with the cloves, oregano, cinnamon, pepper,
pepitoria and sesame seeds. Liquify this sauce in a blender and
strain. Heat the sugar until it turns dark, mix the chocolate,
almonds, and liquified sauce from above.
2. Cook the chicken in this sauce for 25 minutes or until
tender.
