Arañitas are a delicious fun alternative to your traditional tostones. They are great if you are having a party or a halloween dinner. Make sure to serve these arañitas with a dip for your children to enjoy.
Yields 4 Servings
Ingredients
4 green plantains
1 teaspoon of adobo seasoning
Vegetable oil for frying
Directions
1. In a large bowl, begin to prepare the plantains by soaking them in warm water for about 20 minutes (this will soften the skin and make peeling easier).
2. After you remove the plantains from the water, dry them and make sure to cut the ends off making a slit lengthwise down the skin.
Open and remove the skin (using a knife or your hands). Grate them, using the large holes on a box grater (these uneven grated pieces are what create the spider look).
3. Proceed by seasoning the grated plantain with the adobo (make sure to mix well with a spoon). Using your hand, scoop up about 1 teaspoon of the grated plantain and flatten slightly. Repeat this process with the remaining plantains.
4. Place a deep skillet over high heat with about 2 inches of oil. In the hot oil, slowly insert the plantains and let fry (for about 3 minutes or until golden brown). Make sure to turn them over once so it cooks evenly. Drain the plantains on a paper towel and serve.
