Yields 4 Servings

Ingredients:
5 cups water
4 ripe plantains
1 tablespoon butter
1 clove garlic, minced
4 green onions (scallions), chopped

Directions:
1. Peel plantains and slice into 1-inch pieces. Bring water to a boil.

2. Add plantain pieces and cook on medium-high for 20 minutes until most of the water is absorbed.
3. Add butter and garlic to plantains. Mash with a potato masher.
4. Garnish with green onions and serve.
