Because all of my family lives far away, I spend Holidays like today with friends. I am always asked to please make something Mexican, normally salsa, hahhaha. But me being the cook that I am, I look at it as a challenge. I usually will treat them to A Hispanic dish that they may have never tried before...today I made them empandas, filled with beans, rice, salsa and lots of cheese!! And of course the usual request of mango salsa! Instead of the typical ham, my friends surprised us with prime rib and a pork roast marnated in roasted tomato and cilantro!!! Really delicious! Oh, and my friends famous for her coconut custard Pie!!! Still trying to get that recipe out of her!! hahaha...someday...
